The phase behavior of a DPPC monolayer on water was studied using vibrational sum-frequency spectroscopy (VSFG) in conjunction with fluorescence microscopy. A very sharp transition from a phase with curled alkyl chains to a phase with spatially extended chains was observed. The order and orientation of the alkyl chains throughout the phase diagram were determined.
